Process for the preparation of a composition (C1), as defined in any one of Claims 1 to 8, characterized in that it comprises a step a), during which the 2-trimethylammonioacetate of formula ( X): Me Me N + Me is reacted with a mixture (M1) comprising for 100 mol%: - 5 mol% to 20 mol% or a compound of formula (III), or a mixture of compounds represented by said formula (III); and from 80% to 95% molar, or an alcohol of formula (II), or a mixture of alcohols represented by said formula (II); in the presence of an excess of acid of formula (IX): HX (IX) to form a mixture (M2) comprising: - either the compound of formula (I) or a mixture of compounds 4 represented by said formula (I); and - either the compound of formula (IV) or a mixture of compounds represented by said formula (IV); and - the compound of formula (V); and a proportion of unreacted compound of formula (X); and (X) optionally a proportion of the alcohol of formula (II) or a mixture of alcohols represented by said unreacted formula (II), and / or the excess of acid of formula (IX and / or a proportion of the compound of formula (III), a mixture of compounds represented by said formula (III) unreacted.
